Lower Carb Recipes


I'll admit, I overdid the carbs over the holiday.  I also ate more than my share of treats.  So I'm getting back on track and would love to add some new recipes to the mix.  I plan on trying this Paleo Thai Chicken Zoodle Soup recipe that I found on Diabetes Daily. 

I could use more recipe suggestions, because I feel like I'm getting into a rut and cooking the same dishes over and over again.  Please share your favorite healthy / lower calorie / lower carb recipes!

My go-to lately is chicken chili, using sauteed chicken breast or leftover rotisserie chicken, diced onions and peppers, Bush's chili beans, a little chicken broth, canned diced tomatoes, and seasonings to taste. Yummy served up with a little sour cream, a lime wedge, and fresh cilantro.

Oh that sounds fantastic.  I used ground turkey when I make chili, but your chicken version sounds like a great variation.  I'm definitely going to make it next week!  Thanks for sharing!!

Check out skinnytaste.com. Lots of excellent recipes, and you can choose low cho very easily (or paleo or any preference).

Oh yes, Skinnytaste is a great blog!!!  I love that she includes carb counts in the nutrition info.

If you like meatloaf, here's a good recipe: Cheeseburger Keto Meatloaf
Makes 8 servings
Per serving: 2 carbs, 25g protein


  • 2 pounds raw ground beef
  • 2 eggs
  • 1/2 cup grated Parmesan (I use the kind in the green can)
  • 1 small diced onion
  • 2 teaspoons salt
  • 1 teaspoon garlic powder
  • 1/2 cup cheddar cheese, cut into cubes


  1. Mix all of the ingredients except the cheddar cheese. Be careful not to over mix as this can make the meatloaf tough. Mix in the cheese cubes. 
  2. Place mixture into a lightly sprayed large oven safe dish. Form into a meatloaf shape. 
  3. Bake at 350-f for 1 hour, until cooked through and browned on top.
  4. Optional: garnish with sugar free ketchup.
